The same weekend I first made the Girl Scout Samoa Cookies, I made homemade baked chocolate doughnuts. One of my favorite places to “eat” is Dunkin Donuts, but the only one around where I live is on a college campus. Now I have ventured over a few times, but due to their hours and location it is not a guilty pleasure that I get to indulge in often.
This past Sunday I really wanted doughnuts but of course they are closed on Sunday’s; lucky for me I bought a doughnut pan the previous day. The recipe made 12 doughnuts and the first 6 I had tried a vanilla glaze on top, but it wasn’t what I wanted. So I made a chocolate glaze for the last 6, delicious. If you need justification for indulging in these doughnuts, remember they are baked… I did! 🙂

Baked Chocolate Doughnuts with Chocolate Glaze
Ingredients:
- 1 1/4 cup all purpose flour
- 1/2 cup sugar
- 1/3 cup dark cocoa powder
- 3/4 tsp baking soda
- 1/8 tsp salt
- 2 eggs
- 1/2 cup milk
- 1/3 cup light or fat free sour cream
- 1 tsp vanilla extract
- 3 tbs canola oil
- cooking spray for pan
- FOR THE GLAZE
- 2 tbs milk
- 2 tbs cocoa powder
- 1/4 tsp vanilla
- 1 cup powdered sugar
Directions:
- FOR THE DOUGHNUTS
- Preheat your oven to 375 degrees. Prepare the doughnut pan by spraying with baking spray.
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda and salt. Set aside.
- In a small bowl, beat the eggs then add the milk, sour cream, vanilla and canola oil. Beat until combined.
- Pour the egg mixture into the dry ingredients and mix just until combined.
- Spoon in or use a piping bag to fill your doughnut pan. Piping bag (or zip-lock bag with the corner cut) is much easier then spooning in the mixture.
- Bake the donuts for 7 to 8 minutes.
- Remove from the oven and cool for about 3 minutes in the pan, then remove them and allow them to cool further on a wire rack.
- FOR THE CHOCOLATE GLAZE
- For the glaze, whisk together all ingredients until smooth.
- Dip the top of each baked doughnut into the glaze.
- Decorate with sprinkles (optional)
