Every year my mom (and now me) will put together a basket of goodies for neighbors and friends for the holidays and these are my favorite out of them all. When I was younger I would sneak into the kitchen at night and hide cookies in my shirt to bring back to my room.
This year when I made them I decided to make a few with Graham Crackers instead of the Ritz and make a true S’more bar. These do work and taste very good but the Ritz have more of a crisp. If you use graham crackers they are best if eaten with in two days. One thing that I love to do is do half of the cookies in milk chocolate and the other half in white chocolate.
Give me s’more cookies
Ingredients:
- 96 Ritz Crackers or Graham Crackers
- 1 cup of creamy peanut butter.
- 1 cup of Marshmallow Fluff
- 2 lbs milk chocolate candy coating*
- Sprinkles (optional)
- *I like to do half with milk chocolate and half with white chocolate
Directions:

Line a tray with wax paper.

Spread half the crackers with peanut butter. The other half with marshmallow. Place creme side down over peanut butter crackers, forming a sandwich.

Dip sandwiches in melted candy coating, allowing excess to drip off. Place them on the wax paper.

Decorate the cookies with sprinkles.

Refrigerate cookies for 30 minutes.

Drizzle cookie with melted chocolate (optional)
