It’s my last week of story time so I wanted to do something a little special, which means I wanted a reason to bake goodies for work. Since it is almost Thanksgiving I thought that a pumpkin recipe would be perfect but with lack of time and energy I decided to make “semi-homemade” easy pumpkin muffins. I’m not one for box cakes, frosting, or fillings, but when making for little kiddos, as long as they are tasty, that is all that matters.
These Easy Pumpkin Muffins only use four ingredients and that includes water. I love this recipe, the muffins are quick, easy, tasty, and if you top with a cream cheese frosting they are dessert!
This is a great recipe to make with children, I used a similar recipe for a Kids in the Kitchen last year to make cookies, and they were delicious!
Easy Pumpkin Muffins
Ingredients:
- 1 box spice cake mix
- 1- 15oz can pumpkin, I used Libby’s
- 3 large eggs
- 1/4 cup water
- chocolate chips (optional)
Directions:
- Preheat oven 350 degrees. Line muffin pan with liners, spray liners with cooking spray; set aside.
- Mix all ingredients and pour into muffin pan, 3/4 of the way full.
- Bake for 15-18 min or until toothpick comes out clean, or with a few crumbs.
- Remove, allow to cool, and ENJOY!
