Yes, you read it right, ICE CREAM BREAD! Bread made with only two ingredients; self rising flour and any flavor ice cream. I was skeptical when I was first told this, but I baked it today and they turned out very good!
A co-worker told me about this recipe, and immediately I thought this would be the perfect food science program to present at two of our library branches for The Virginia Science Festival. The recipe makes an 8 inch loaf, but for the program I thought it would cute for the kids to make their own “mini loaf” using a Twinkies pan. While the bread is baking we will make homemade butter and jam. Most importantly we will discuss the how and why this happens. So why does this work? The ingredients in ice cream are eggs, milk, sugar, and vanilla. If you take the ingredients that are in the ice cream plus self rising flour, you have the ingredients for most quick breads; in a different form. Self rising flour has baking powder and salt which aid in the rising of the bread. Makes perfect sense.
This is the easiest most creative way I’ve seen for making bread. It’s also the best excuse to have to keep ice cream in the house… you know, for if you run out of bread.
I honestly think the hardest part of this recipe is choosing which flavor ice cream to use. I used cookies and cream this time but I can’t wait to try new ice cream combinations. If you have an idea to share, please do!
*If you do not have self rising flour you can substitute your own by combining 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Sift together.
*This recipe will make 8 mini loaves (Twinkies) or 1 8 inch loaf, if you are making a loaf the cook time will be about 40 minutes.
Ice Cream Bread
Ingredients:
- 1 pint (2 cups) of ice cream, softened; your flavor of choice
- 1 1/2 cups all-purpose self rising flour
- Any extra additives (chocolate or peanut butter chips, nuts, berries, cookie crumbles, go crazy!)
Directions:
- Preheat oven to 350 degrees. Grease your bread pan or Twinkies pan.
- Stir together ice cream and flour, stirring just until flour is moistened. Pour in any additives
- Spoon batter evenly into your pan.
- If baking in a 8×4 loaf pan bake for 40 minutes or until toothpick inserted in the center of the bread comes out clean.
- If baking in Twinkies pan bake for 12-15 minutes or until toothpick inserted in the center of the bread comes out clean.
- Remove pan and cool on a wire rack.
- Add butter and/or jelly and enjoy!
