I know, I know, it sounds super weird; chocolate and bacon cupcakes; I had to think about it for a second too, but I am so glad I did. I was at work and I noticed an Allrecipes magazine opened to a page about Office Party Food and there, looking right at me, was this delicious chocolate cupcake topped with bacon. For a split second I thought “nah” but that second thought was all I needed. I mean think about it, everything tastes better with chocolate…and with bacon. Why not put them together?
I topped the cupcakes with a super easy chocolate buttercream frosting, (frosting recipe to be posted in a few hours.) with a piece of crisp bacon sticking out of the top. These chocolate cupcakes taste amazing with or with out the bacon; I do believe next time I make a chocolate cupcake I will be using this recipe!

Chocolate Bacon Cupcakes
Ingredients:
- 12 slices of bacon
- 2 cups all-purpose flour
- 3/4 cup plus 1 tbs unsweetened cocoa powder (divided)
- 2 cups sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 2 eggs
- 1 cups strong brewed espresso (original recipe calls for regular coffee)
- 1 cup buttermilk (I used low-fat)
- 1/2 cup canola oil (original recipe uses vegetable oil)
- 1/3 tsp vanilla (original recipe does not call for vanilla)
- mini chocolate chips (optional, not in original recipe)
Directions:
- Preheat oven to 375 degrees F. Line muffin tins with cupcake liners. Place bacon in a large, deep skillet. cook over medium high heat until evenly brown. Drain, crumble, and set aside. (We chopped the bacon in to little pieces).
- In a large bowl, stir together flour, 3/4 of the cocoa powder, the sugar, baking soda, baking powder, and salt.
- Make a well in the center and pour in eggs, coffee, buttermilk, and oil. Stir just until blended. Mix in 3/4 of the bacon and a handful of mini chocolate chips.
- Spoon batter into prepared cups, dividing evenly.
- Bake in preheated oven until the tops spring back when lightly pressed. Bake for 18-22 minutes. (Mine were ready in 18 minutes.)
