Everyone likes a grilled cheese, but what is fun is taking that classic sandwich and creating something completely different. I love jalapeno poppers so one night I decided to put them on my grilled cheese along with fried onions. Everyone has their own method on cooking their grilled cheese, but this is the method that I use. You do not have to use the cheese I use in this recipe, we prefer pepper jack and habanero. If neither of those are available we use white american over the yellow. That is just our preference.
There are so many different ways to re-create the grilled cheese, this is just one of my ideas.
Jalapeno Popper and Onion Grilled Cheese
Ingredients:
- 2 slices of white bread
- 2 slices of pepper jack cheese
- 5 or 6 slices of the CABOT Habanero cheese. This comes in a block so the slices are small thin squares.
- 4 Jalapeno poppers
- 1 slice of onion
- butter
Directions:

Cut onion slice. Put aside. Take 4 jalapeno poppers and put in the deep fryer. Cook for 3 1/2minutes. (follow instructions on package) We use a deep fryer, but you can cook them in the oven. Remove the jalapenos and place on a plate. Place the onions in the deep fryer for 30 seconds. Remove the onions and put both the onions and jalapeno poppers on the cheese sandwich.

Set stove at medium-low. Smear a few thin squares of butter on one side of the bread before placing the closed sandwich in the skillet. Let the sandwich cook on the buttered side until it is as dark as you want it. Put thin butter squares on the other side of the bread. Once buttered, flip. Grill until cheese is melted and it is to your desired darkness.
